The Linens aroma culture is a surface maturation culture. It forms an orange, red color and is salt tolerant. The linens bacterium is used as a surface culture for washed rind cheeses and as an additional culture for soft cheeses. It helps the fungus to grow on the outside. Thrive well with Geotrichum

Freeze-dried bacterial culture

1 dose (= for 250 to 300 liters of milk).

Can be frozen sweet.

Dissolve in skimmed milk, divide in ice cube tray or small jars and put in the freezer.
