Mixture of freeze-dried lactic ferments for rustic Tomme.
Composed of
• thermophiles 40% (ST thermophilus, LB helveticus)
• mesophilic 40% (homofermentative and heterofermentative)
• ripening micrococci 20%.
Use for pressed cheeses and traditional tomme.
Does not contain surface flora.
One tube allows you to inoculate 100 to 200 liters of milk.
Direct seed ferment
1 dose (= for 100 (pasteurized) to 200 (raw) liters of milk).
Easy to dose through transparent tube
Store in the freezer.
